Abstract
Bengkalis Island bordering the Malacca Strait has a lot of natural wealth, one of which is terubuk fish. This processed fish is processed by MSMEs to create jobs and to help the economy of local residents. Therefore it needs special processing which changes the fish bones to make them soft, this processing is usually known as presto. This Presto can not only process the worst fish but other types of fish, especially fish that have lots of bones. Presto planning with a pressure vessel tool using 304 stainless steel plate material with a design maximum pressure of 150 psi. In this presto pressure vessel the principle applied is that heated water will boil at a temperature of 100 – 121 °C at a pressure of 1 atm. This tool can tenderize cooked meat and bones (thorns) in a relatively short time, this tool also has a capacity of 20 kg in one cooking. From the results of the tests that have been carried out, it can be concluded that the cooking time depends on what is being cooked, such as ground fish and boiler chicken. The cooking time for fish is longer than for boiler chicken.
