Abstract

Ice cream is a product made from a combination of freezing and agitation processes in ingredients consisting of milk, sweetener, stabilizer, and flavor enhancer. According to the Indonesian National Standard, ice cream is a type of semi-solid food made by freezing ice cream flour or from a mixture of milk, vegetable and sugar. Rotary ice cream sellers in Indonesia, in their business, experience many obstacles during manufacture, one of which takes a long time. because the manufacture of ice cream is generally made by rotating it by hand which takes 90 minutes, it is made by rotating the ice cream tube so that the dough becomes ice crystal grains. The AC motor rotational speed control system and temperature monitoring on IOT-based ice cream machines aims to help sellers/users in making ice cream more efficient so that sellers can still carry out other activities at the same time. By calculating the demand capacity for making ice cream, the result is that making 9 liters takes 15 minutes.
