Bamban cracker production in home industries is still largely carried out manually, particularly during the dough cutting process. This conventional method results in non-uniform slice thickness, requires relatively long processing time, and reduces production efficiency. This study aimed to design and construct a Bamban cracker dough cutting machine capable of producing uniform slices with a thickness of 2 mm, achieving a production capacity target of 10 kg/hour, and evaluating the machine performance based on the test results. The method consisted of field observation, literature review, machine design, fabrication, assembly, and performance testing. The machine uses a 0.75 HP electric motor with a pulley and V-belt transmission system, equipped with a rotary cutting blade and a slice thickness adjustment mechanism. The test results showed that the machine was able to produce uniform dough slices with a thickness of 2 mm. The machine was able to cut 1.05 kg of dough in an average time of approximately 3 minutes. The test results indicate that the machine operated properly and helped improve the efficiency of the cutting process, produce more uniform slices, and reduce production time compared with manual cutting. The developed machine can be used as a production aid for Bamban cracker home industries and small and medium-sized enterprises.
