Abstract

Tofu industries that still use simple equipment often face quality and efficiency problems, especially in the soybean boiling process. Boiling using a boiler creates an unpleasant aroma and results in sediment that interferes with the quality of the tofu. This study aims to design and manufacture a 1.5 bar pressure vertical boiler as a solution to improve the efficiency and quality of tofu production. The research method includes designing a boiler with a capacity of 100 kg of soybeans per day and testing the cooking time of soybean porridge using the boiler. The boiler is designed without a furnace with a soil-based combustion chamber and uses stainless plate as a tube material. The results showed that the use of boilers can speed up the soybean boiling process and improve production hygiene. The test results showed that the heating time was 6 minutes with 0.5 bar pressure, 4 minutes with 4 bar pressure, and 2 minutes with 1.5 bar pressure. The implementation of this boiler is able to reduce production time and labor, and improve the quality of the tofu produced. With the use of boilers, it is expected that the tofu industry can meet increasing market demand more efficiently.
