Abstract
The advancement of technology in the food sector encourages innovation in production tools, including medium-scale ice cream making. This study aims to design and develop a rotary ice cream machine with a capacity of 20 kg, equipped with two mixing drums to enhance production efficiency and output quality. The machine is designed with a mechanical system powered by an electric motor as the main driver, featuring dual stainless steel food-grade mixing tanks that are resistant to low temperatures and safe for food processing. The machine frame is constructed using UNP steel to ensure strength and stability during the mixing process. The use of two drums allows operators to produce two flavors or batches of ice cream simultaneously, providing flexibility in meeting market demand. Trial results show that the machine operates stably over long periods and produces ice cream with a smooth and even texture. This design is expected to assist small and medium enterprises in increasing production capacity efficiently and hygienically.
