Abstract
Nadya Bakery is a micro, small, and medium enterprise (MSME) engaged in bread production, facing challenges in the drying process, which is still carried out conventionally. The current drying method is inefficient as it requires a long processing time, uneven heat distribution, and high energy consumption. Therefore, this study aims to design and develop a bread drying machine based on a rotating shaft mechanism to enhance drying efficiency and maintain product quality. The conclusion of this study is that the use of a rotating shaft mechanism in the bread drying machine can be an innovative solution for the Bakery industry, particularly for MSMEs seeking to improve production capacity and energy efficiency. This technology can be applied not only in the food industry but also as a reference for further developments in drying process automation.
